Mushrooms need two things to taste good: a hot, wide pan and patience. Cooked without crowding and left alone for the first few minutes, they release their water, then brown and take on a deep, meaty flavor. Garlic, thyme and butter go in at the end so they do not burn. Serve these on steak, toast, mashed potatoes or rice, or stir them into pasta. They keep well and reheat in a minute.
Instructions
- Wipe the mushrooms clean with a damp paper towel without soaking them. Trim the stems and cut the mushrooms into halves, or quarters if large.
- Heat the oil in a very large skillet over medium-high heat until it shimmers. Add the mushrooms in a single layer, working in 2 batches if needed, and cook without stirring for 3 minutes until the undersides are golden.
- Stir, sprinkle with the salt and cook for 5 to 6 minutes more, stirring now and then, until the liquid they release has evaporated and the mushrooms are deep brown.
- Lower the heat to medium. Add the butter, garlic and thyme and cook, stirring, for 1 minute until the butter foams and the garlic smells fragrant, but do not let it brown.
- Take the pan off the heat and add the lemon juice, pepper and parsley. Toss, taste and serve hot.
Tips
- Salt after the first few minutes. Early salt draws out water, and the mushrooms brown better if they start dry. Never wash them under running water, since they soak it up.
- A mix of cremini, shiitake and oyster mushrooms gives more flavor. A splash of white wine added with the garlic adds depth.
