Garlic Butter Salmon Foil Packets with Green Beans

Foil packets steam the fish in its own juices, which makes it hard to overcook and keeps cleanup to a minimum. Each packet holds a salmon fillet, crisp green beans and cherry tomatoes under a spoonful of garlic butter. Bake them in the oven, or set them on a barbecue when the weather is warm. Open them carefully, because the steam is hot, and spoon the buttery juices over the top.

Instructions

  1. Heat the oven to 200°C (400°F), or heat a grill to medium. Tear off four sheets of foil, each about 40 cm (16 inches) long, and set them on the counter.
  2. Mash the butter with the garlic, lemon juice, lemon zest, half the parsley and a pinch of the salt in a small bowl.
  3. Divide the green beans and tomatoes among the foil sheets, placing them in the center. Season lightly with some of the salt and pepper.
  4. Pat the salmon dry, season it with the rest of the salt and pepper and set a fillet on each pile of vegetables. Top each with a quarter of the garlic butter and a lemon slice.
  5. Fold the foil over the fish and crimp the edges tightly to form a sealed packet, leaving a little air space inside. Set the packets on a baking sheet.
  6. Bake for 16 to 18 minutes, or grill with the lid down for 12 to 14 minutes. Open one packet to check: the salmon should flake and read 63°C (145°F), and the green beans should be tender-crisp.
  7. Open the packets carefully, as the steam is hot. Sprinkle with the remaining parsley and serve in the foil with the juices.

Tips

  • Blanch the green beans for 2 minutes first if you like them very soft. Slice thicker vegetables such as zucchini thinly.
  • Asparagus, broccoli florets or sliced potatoes can replace the beans, but pre-cook potatoes for 8 minutes so they finish with the fish.
