Ground Beef and Vegetable Soup

Ground beef and vegetable soup is a weeknight standby in many homes: cheap, quick and full of things children will eat. The beef is browned first so the broth tastes deep and savory, then potatoes, carrots and tomatoes simmer together, and frozen vegetables go in at the end to save time. The whole pot is ready in about 45 minutes. It makes good leftovers for lunches.

Instructions

  1. Heat the oil in a large pot over medium-high heat. Add the beef and cook for 6 to 7 minutes, breaking it up with a spoon, until it is browned and cooked through (71°C / 160°F). Spoon off all but about 1 tablespoon of the fat.
  2. Add the onion, carrots and celery and cook for 6 minutes, stirring, until the onion is soft. Stir in the garlic, tomato paste and oregano for 1 minute.
  3. Add the tomatoes, stock, potatoes, bay leaves and salt. Bring to a boil, then reduce the heat and simmer for 15 minutes, until the potatoes are tender.
  4. Stir in the frozen vegetables and simmer for 5 minutes more.
  5. Remove the bay leaves. Stir in the vinegar and pepper, taste for salt, and serve hot.

Tips

  • Let the beef brown properly before you add anything else. The browned bits on the bottom of the pot give the broth most of its flavor.
  • For a heartier soup, stir in 100 g (1 cup) of small pasta or 100 g (1/2 cup) of rice with the frozen vegetables, and add a cup of extra stock.

Questions and answers

Can I use ground turkey instead of beef?

Yes. Ground turkey is leaner, so add an extra tablespoon of oil when browning it and cook it until no pink remains (74°C / 165°F).

Can I make ground beef vegetable soup in a slow cooker?

Yes. Brown the beef and onion first, then cook everything except the frozen vegetables on low for 6 to 7 hours. Add the frozen vegetables for the last 20 minutes.

How long does ground beef vegetable soup keep?

It keeps for 4 days in the fridge and 3 months in the freezer. The potatoes soften slightly after freezing but the flavor holds up well.
