Ground Turkey Lettuce Wraps with Ginger and Garlic

Lettuce cups turn a quick stir-fry into hand food that is light but still satisfying. Ground turkey is browned hard so it develops flavor, then tossed with ginger, garlic, mushrooms and crunchy water chestnuts in a glossy soy and lime sauce. Spoon the warm filling into crisp lettuce leaves and eat with your hands. It makes a fun dinner for a family, and the leftover filling is good over rice the next day.

Instructions

  1. Whisk the sauce ingredients in a small bowl until the cornstarch dissolves.
  2. Heat the oil in a large skillet or wok over high heat. Add the turkey and cook for 5 to 6 minutes, breaking it up and letting it brown, until no pink remains.
  3. Add the mushrooms and carrot and cook for 4 minutes, until the mushrooms release their liquid and it evaporates.
  4. Add the garlic, ginger and the white parts of the spring onions and stir for 30 seconds.
  5. Stir the sauce, pour it in and add the water chestnuts. Cook for 1 to 2 minutes until glossy and thick.
  6. Stir in the green spring onion. Spoon the filling into the lettuce leaves, top with peanuts and serve with lime wedges.

Tips

  • Let the turkey sit undisturbed for 2 minutes at a time so it browns instead of steaming. Browning gives most of the flavor.
  • No water chestnuts? Use diced celery or jicama for crunch. For a gluten-free version, use tamari instead of soy sauce.
