Hausa Koko (Ghanaian Spiced Millet Porridge)

Hausa koko is a spiced millet porridge, sold in the early morning from big pots on Ghanaian street corners and ladled into bowls or plastic bags. Millet flour is cooked in water scented with ginger, cloves and black pepper until thick and glossy, then sweetened at the table. It is traditionally eaten with koose (bean fritters) for dunking. The porridge is mildly sour when the millet has been fermented overnight and gently sweet when it has not.

Instructions

  1. Whisk the millet flour with the cold water in a bowl until smooth. Leave it for 30 minutes.
  2. Bring the cooking water to a boil in a heavy pot with the ginger, cloves, black pepper and cayenne. Simmer for 5 minutes.
  3. Pour the millet slurry into the pot slowly, whisking constantly so no lumps form.
  4. Cook over medium heat, stirring, for 15 to 20 minutes until the porridge is thick, smooth and glossy.
  5. Stir in the salt. Thin with a little hot water if it is too thick, as it will thicken more as it cools.
  6. Ladle into bowls, sweeten with sugar to taste and serve hot, ideally with koose.

Tips

  • For the traditional sour note, leave the millet slurry covered at room temperature overnight before cooking. It should smell pleasantly tangy, not rotten.
  • Stir in a spoonful of peanut butter or a splash of coconut milk at the table for a richer bowl.
