Homemade nuggets are made of one ingredient you can name: chicken breast. Cut into pieces, dipped in egg and rolled in seasoned panko with a little Parmesan, they bake on a hot, oiled tray until crisp, with no deep fryer. Children like them with ketchup, and adults like them with a mustard dip. A double batch freezes well, so there is always something ready for a rushed evening.
Instructions
- Heat the oven to 220°C (425°F). Put a large baking tray in the oven with 1 tablespoon of the oil to heat up.
- Pat the chicken pieces dry and toss them with half the salt.
- Mix the flour with a quarter of the salt in one bowl. Beat the eggs with the milk in a second. In a third, mix the panko, Parmesan, garlic powder, paprika, pepper and the last quarter of the salt, then stir in the remaining 2 tablespoons of oil.
- Coat a few pieces at a time: roll in the flour, dip in the egg and press into the crumbs on all sides.
- Remove the hot tray and arrange the nuggets in one layer, spaced apart.
- Bake for 8 minutes, turn the nuggets and bake for 8 to 10 minutes more, until golden and 74°C (165°F) inside.
- Serve warm with your favorite dips.
Tips
- Cool the baked nuggets completely, then freeze them on a tray before bagging. Reheat from frozen at 200°C (400°F) for 12 to 15 minutes.
- For a gluten-free version, use crushed cornflakes or gluten-free breadcrumbs and swap the flour for cornstarch.
