Homemade Pork Sausage Patties with Sage and Fennel

Making your own sausage patties takes ten minutes and no special equipment, and you control the salt and spices. The mix is simply ground pork with sage, fennel seed, garlic, pepper and a pinch of chili, with a little maple syrup for balance. Resting the mixture for an hour lets the salt and spices work into the meat. The patties cook in a pan in minutes and freeze well, so they are handy for breakfasts, burgers and quick dinners with eggs and potatoes.

Instructions

  1. Put the pork in a large bowl. Add the sage, fennel seeds, garlic, salt, pepper, chili flakes and maple syrup.
  2. Mix with your hands for about 1 minute, until the spices are evenly spread and the meat looks slightly sticky. Do not overwork it.
  3. Fry a teaspoon of the mixture in a small pan until cooked through, then taste and adjust the salt and spices.
  4. Cover the bowl and refrigerate the mixture for at least 1 hour, or overnight.
  5. Shape the mixture into 8 patties, each about 9 cm (3 1/2 inches) wide and 1.5 cm (1/2 inch) thick.
  6. Heat the oil in a large skillet over medium heat. Cook the patties in two batches for 4 to 5 minutes per side, until browned and a thermometer reads 71°C (160°F). Drain briefly on paper towels and serve.

Tips

  • For a variation, replace the sage with thyme and a little rosemary, or add a grated apple squeezed dry.
  • To freeze, set the raw patties on a tray, freeze until firm, then bag them with baking paper between the layers. Thaw overnight in the fridge before cooking.
