Honey Garlic Pork Chops

Few sauces are as quick or as popular with children as this honey and garlic glaze. It takes just honey, garlic, soy sauce and a splash of vinegar, and it thickens in the pan while the chops finish cooking. Searing the chops first gives them a golden crust, then the glaze is spooned over them until it coats. Watch the heat once the honey goes in, because it can burn. Serve with rice and a green vegetable to balance the sweetness.

Instructions

  1. Pat the chops dry and season them with the salt and pepper. Whisk the honey, soy sauce, garlic, vinegar and water together in a small bowl.
  2. Heat the oil in a large skillet over medium-high heat. Cook the chops for 4 minutes per side, until golden brown and nearly cooked through, about 58°C (136°F) inside. Move them to a plate.
  3. Lower the heat to medium. Pour the glaze into the pan and simmer for 2 minutes, scraping up the browned bits.
  4. Stir in the cornstarch mixture and simmer for 1 minute, until the glaze turns glossy and thick enough to coat a spoon.
  5. Return the chops and their juices to the pan and turn them in the glaze for 1 to 2 minutes, until they read 63°C (145°F).
  6. Rest the chops for 3 minutes, spoon the glaze over the top, sprinkle with sesame seeds and spring onion, and serve.

Tips

  • Keep the heat at medium once the honey goes in. It scorches quickly and turns bitter.
  • Add 1 tbsp of grated ginger or a pinch of chili flakes to the glaze for more kick.

How do I keep the glaze from burning?

Lower the heat before adding it, keep it moving and take the pan off the heat as soon as it thickens.
