Honey Mustard Chicken Breasts

Honey and mustard are an old pairing, sweet and sharp, and they cook down into a glaze that clings to chicken like lacquer. This version uses smooth Dijon and whole-grain mustard for heat and texture. Slicing the breasts into thin cutlets keeps them tender and cooks them through in minutes. Serve with rice, roasted potatoes or a pile of green beans.

Instructions

  1. Slice each breast in half horizontally to make 8 thin cutlets. Season with the salt, pepper and paprika.
  2. Whisk the honey, both mustards, garlic, stock and vinegar together in a small bowl.
  3. Heat the oil in a large skillet over medium-high heat. Cook the chicken in two batches for 3 to 4 minutes per side, until golden. Move it to a plate.
  4. Pour the honey mustard mixture into the empty pan and simmer over medium heat for 3 to 4 minutes, until it thickens enough to coat a spoon.
  5. Return all the chicken and its juices to the pan. Turn the pieces in the sauce for 2 minutes, until glossy and the thickest piece reads 74°C (165°F).
  6. Sprinkle with parsley and serve with the extra sauce from the pan.

Tips

  • Watch the heat once the honey goes in. It scorches quickly, so keep the pan at medium and stir the sauce as it thickens.
  • Boneless thighs make a juicier version and need 5 to 6 minutes per side. A spoonful of coconut milk stirred in at the end gives a creamy sauce.

Questions and answers

Can I bake honey mustard chicken instead?

Yes. Toss the raw chicken in the sauce, place it in a baking dish and bake at 200°C (400°F) for 20 to 25 minutes, basting once, until it reaches 74°C (165°F).

Can I marinate the chicken in the sauce?

Yes, for up to 4 hours in the fridge. Longer than that and the acid can turn the surface of the chicken mushy.

What side dishes go with honey mustard chicken?

Rice, roasted baby potatoes, buttered noodles or couscous work well. Add green beans, broccoli or a crisp cabbage salad to balance the sweetness.
