Juicy Turkey Burgers with Herbs and Onion

Turkey is lean, so a burger made from it dries out quickly unless you add moisture. This recipe uses grated onion for juice, an egg and breadcrumbs as binder, and a little olive oil worked into the meat. Mustard and herbs add flavor. Handle the mixture gently, make a dimple in the center of each patty and do not press it while it cooks. The result is a tender burger that holds together on the bun.

Instructions

  1. Mix the turkey, onion, breadcrumbs, egg, oil, mustard, parsley, thyme, garlic powder, salt and pepper in a bowl with your hands until just combined. Do not overmix.
  2. Divide into 4 portions and shape each into a patty about 2 cm (3/4 inch) thick and slightly wider than the buns. Press a shallow dimple into the center of each.
  3. Chill the patties for 15 minutes, which helps them hold their shape.
  4. Heat a thin film of oil in a large skillet over medium-high heat, or heat a grill to medium-high. Cook the patties for 5 to 6 minutes per side, without pressing, until golden and 74°C (165°F) in the center.
  5. Toast the buns in the pan or on the grill for 1 minute.
  6. Rest the burgers for 2 minutes, then serve in the buns with lettuce, tomato and pickles.

Tips

  • Choose ground turkey that includes dark meat, or 93% lean rather than 99%. Extra-lean turkey makes dry burgers.
  • A handful of grated zucchini (squeezed dry) or finely chopped mushrooms adds moisture. Top the burgers with cheese for the last minute of cooking if you like.

Questions and answers

Can I freeze turkey burgers?

Yes. Freeze the raw patties on a tray, then bag them with baking paper between the layers for up to 3 months. Cook from frozen, adding 3 to 4 minutes per side.

Why are my turkey burgers dry?
