Kor moo yang is grilled pork neck, a favorite of Isan street grills and beer gardens. Pork neck is a well-marbled cut that stays juicy over charcoal, and a simple marinade of garlic, coriander root, pepper, soy and oyster sauce gives it a savory, slightly sweet crust. It is sliced thin and eaten with sticky rice and a spicy dipping sauce, with raw vegetables on the side.
Instructions
- Pound the garlic, coriander roots and white pepper to a paste. Stir in the soy sauce, oyster sauce, fish sauce, palm sugar and oil until the sugar dissolves.
- Coat the pork slabs well, cover and refrigerate for at least 4 hours, or overnight.
- Bring the pork to room temperature for 20 minutes. Heat a grill to medium and oil the grates lightly.
- Grill the pork for 6 to 8 minutes per side, turning once or twice, until charred in spots and cooked through (at least 63°C/145°F). Move it to a cooler side if the sugar starts to burn.
- Rest the pork for 5 minutes, then slice across the grain into strips about 1 cm (1/2 in) thick.
- Serve with sticky rice, the dipping sauce and raw vegetables.
Tips
- Pork neck is sometimes sold as collar or Boston butt steaks. If you cannot find it, use boneless pork shoulder steaks cut about 2.5 cm (1 in) thick.
- In a pan, cook the slabs in a heavy skillet or grill pan over medium heat for 7 to 8 minutes per side.
Questions and answers

Nam jim jaew, a sharp sauce of lime, fish sauce, chili flakes and toasted rice powder, is the classic partner.
