Kükü (Azerbaijani Herb Omelet)

Kükü is a thick herb omelet, more green than yellow, that Azerbaijani cooks make when the market is full of fresh greens. Eggs merely hold together heaps of chopped dill, cilantro, parsley and spinach, and the omelet is flipped once so both sides turn golden. Eat it warm with bread and yogurt for breakfast, or cold in a sandwich. It keeps well, which makes it good picnic food.

Instructions

  1. Beat the eggs in a large bowl with the turmeric, salt and pepper. Stir in the herbs, spinach, spring onions and walnuts. The mixture should look like greens held together by egg.
  2. Heat 2 tbsp of the oil in a 24 cm (9.5 in) nonstick skillet over medium-low heat.
  3. Pour in the mixture, press it flat and cover. Cook for 8 to 10 minutes, until the edges are set and the top is almost firm.
  4. Slide the omelet onto a plate, add the last tbsp of oil to the pan and flip the omelet back in. Cook uncovered for 3 to 4 minutes, until golden.
  5. Cut into wedges and serve warm or at room temperature with bread and yogurt.

Tips

  • The more herbs, the better. You can go up to 300 g (10.5 oz) of greens as long as the eggs still bind them.
  • No flipping needed: bake it in an oiled oven-safe skillet at 180°C (350°F) for 20 to 25 minutes, until set in the center.

Questions and answers

How is kükü different from a frittata?

Kükü holds far more herbs than egg and is cooked until firm and sliceable, while a frittata is usually softer with more egg and often cheese or vegetables.

Can I make kükü ahead of time?

Yes. It keeps in the fridge for 3 days and is good cold or reheated gently in a pan. Slices also work well in sandwiches.

Can I freeze kükü?

It is better not to. The herbs release water after thawing and the texture turns spongy.

How long does it take to make Kükü (Azerbaijani Herb Omelet)?

About 30 min in total: 15 min of preparation and 15 min of cooking.
