Olive Oil and Sea Salt Granola Clusters

Salt makes granola taste less like candy and more like a proper breakfast food. Here a mild olive oil replaces the usual neutral oil, bringing a savory depth that plays well against the maple syrup, while a whisked egg white acts as glue for large, crunchy chunks. Almonds, pumpkin seeds and sunflower seeds add crunch and protein, and a shake of flaky salt goes on while the granola is still hot.

Instructions

  1. Heat the oven to 150°C (300°F) and line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, mix the oats, almonds, pumpkin seeds, sunflower seeds, orange zest and fine salt.
  3. Whisk the olive oil, maple syrup and vanilla together in a small bowl. In a second bowl, whisk the egg white with a fork for about 30 seconds, until frothy.
  4. Pour the oil mixture over the oats and stir until evenly coated. Fold in the egg white until the mixture looks glossy and slightly sticky.
  5. Tip onto the baking sheet and press into one compact, even layer. Bake for 40 to 45 minutes, rotating the pan once halfway and not stirring, until deep golden.
  6. Sprinkle with flaky salt as soon as the pan comes out of the oven. Cool completely, about 45 minutes, then break into chunks.

Tips

  • Leave the granola alone while it bakes and cools. Stirring breaks up the clusters, so rotate the pan instead and let the granola set fully before you break it apart.
  • Choose a mild, buttery olive oil. A very peppery oil can turn slightly bitter after 45 minutes in the oven.

Questions and answers

Does olive oil granola taste of olive oil?

Only faintly. A mild oil adds richness and a savory edge that balances the maple syrup. A strongly peppery oil will show more, so taste yours before you bake with it.

How do I get big granola clusters?

Add a little egg white as a binder, press the mixture firmly into an even layer and leave it untouched until it is completely cool. Stirring during baking breaks the clusters apart.

Can I use other nuts and seeds?

Yes. Swap in walnuts, hazelnuts, pecans, flaxseeds or sesame in the same total weight. Keep the amount of oats and binder the same so the clusters still hold together.
