Sometimes the best potato side dish is the simplest. New potatoes cooked in well-salted water until just tender, drained and tossed in butter and a lot of fresh parsley are creamy and light, and they soak up any gravy or sauce on the plate. They are a spring and summer classic with salmon, roast chicken and lamb, and the skins are thin enough that there is no need to peel. It takes 25 minutes and a single pot.
Instructions
- Scrub the potatoes but do not peel them. Cut any larger ones in half so all the pieces are about the same size, 3 to 4 cm (1 1/4 to 1 1/2 inches).
- Put the potatoes in a large saucepan, cover with cold water by 3 cm (1 inch) and add the tablespoon of salt. Starting in cold water helps them cook evenly.
- Bring to a boil, then reduce to a steady simmer and cook for 12 to 18 minutes, depending on size, until a knife slides into the center with no resistance.
- Drain well and return the potatoes to the hot pot for 1 minute so the steam dries them.
- Add the butter, parsley, lemon juice, 1/4 teaspoon of salt and some pepper. Toss gently until the butter melts into the potatoes, then taste and serve hot.
Tips
- Start the potatoes in cold water so the outside does not turn mushy before the middle cooks, and salt the water well, because it seasons the potatoes from the inside.
- Chives, mint, dill or tarragon can replace the parsley. Crush the potatoes lightly with a fork as you add the butter for a richer finish, or use olive oil for a dairy-free dish.
