Rice noodles, crunchy raw vegetables and a thick peanut and lime dressing make a salad that eats like a meal and needs almost no cooking. The noodles take only a few minutes in boiling water, and the sauce is whisked in a bowl. It works warm or cold, which makes it equally good for a quick dinner or a packed lunch. Add baked tofu or edamame if you want extra protein.
Instructions
- Cook the rice noodles following the packet, usually 3 to 5 minutes in boiling water. Drain, rinse under cold water and drain again thoroughly. Snip them a few times with scissors if they are very long.
- For the dressing, whisk the peanut butter, lime juice, tamari, maple syrup, sesame oil, ginger, garlic and chili flakes in a bowl. Add warm water, 1 tablespoon at a time, until it pours like thick cream.
- Put the noodles in a large bowl and pour over most of the dressing. Toss with tongs until each strand is coated.
- Add the cabbage, carrots, pepper, spring onions and herbs.
- Toss again, then taste and adjust with more lime juice or tamari.
- Divide among bowls and top with the chopped peanuts and the rest of the dressing.
Tips
- Rice noodles stick together as they cool. Toss them with the dressing soon after rinsing, or with a teaspoon of sesame oil if you need to wait.
- For a nut-free version, use sunflower seed butter instead of peanut butter and top the salad with sesame seeds in place of peanuts.
Questions and answers

Yes. Keep the dressing separate from the noodles and vegetables for up to 3 days and toss everything together before eating. The sauce thickens in the fridge, so thin it with a little water.
Is this peanut noodle salad spicy?
It is mild with the chili flakes listed. Add more chili flakes, chili sauce or fresh chili for more heat.
Can I use other noodles?
Yes. Soba, spaghetti or wheat noodles all work, but they are not gluten-free. Cook them as the packet says.
