Pressure Cooker Beets with Orange and Walnuts

Beets usually take an hour to roast or boil, which is why many people only buy them cooked. A pressure cooker gets them tender in twenty minutes, with the skins slipping off easily afterward. Tossed while warm in an orange and olive oil dressing, they soak up flavor, and toasted walnuts add crunch. Serve them as a side with roast meat, on a bed of greens or as part of a winter salad plate. They keep well for several days.

Instructions

  1. Trim the beet tops, leaving about 2 cm (3/4 inch) of stem, and keep the root tail on. This keeps the color from bleeding out during cooking.
  2. Pour the water into the pressure cooker and set the trivet inside. Put the beets on the trivet in a single layer, or stacked loosely.
  3. Close and lock the lid, set the vent to sealing and cook at high pressure for 20 minutes for medium beets about 6 cm (2 1/2 inches) wide. Small ones need 12 to 15 minutes.
  4. Let the pressure release naturally for 10 minutes, then release the rest. A knife should slide into the largest beet easily.
  5. Rinse the beets under cold water until they can be handled. Slip off the skins with your fingers or a paper towel, wearing gloves if you wish. Cut into wedges.
  6. Whisk the oil, orange zest and juice, vinegar, maple syrup, salt and pepper. Toss the warm beets in the dressing and let them stand for 10 minutes.
  7. Fold in the orange segments, walnuts and herbs, and serve warm or chilled.

Tips

  • Wear gloves or rub your hands with a little oil to keep them from staining. Cut beets on a board that does not show stains.
  • Mix beets of similar size so they cook at the same time. For a sharper dressing, whisk in 1 tsp Dijon mustard.

Questions and answers

Do I need to peel beets before pressure cooking?

No. Cook them whole and unpeeled, then slip the skins off after cooking. It is far easier than peeling raw beets.

How long do cooked beets keep?

Keep them in the fridge in a covered container for up to 5 days. They taste better after a night in the dressing.

Why did my beets bleed in the pot?

The skins were probably cut or the stems trimmed too short. Leave 2 cm of stem and the tail on, and do not pierce the beets before cooking.
