Pressure Cooker Hard-Boiled Eggs

Pressure cooking is one of the most reliable ways to make eggs that peel cleanly. Steam under pressure sets the whites quickly, and the ice bath pulls the egg away from the shell. You can cook a dozen as easily as two, which makes it handy for meal prep, salads, deviled eggs and Easter. Cooking times vary slightly by model and egg size, so test one batch and note the time that suits you.

Instructions

  1. Pour the water into the pot of your pressure cooker and set the steam rack or trivet inside. Place the eggs on the rack in a single layer, or stack gently if you have many.
  2. Close and lock the lid and set the vent to sealing. Cook at high pressure for 5 minutes for firm, fully set yolks.
  3. When the time is up, let the pressure release naturally for 5 minutes. Then release the remaining pressure with the quick-release valve, protecting your hand from the steam.
  4. Use tongs to move the eggs straight into the ice bath. Leave them for 5 minutes to stop the cooking and loosen the shells.
  5. Crack each egg gently on the counter, roll it under your palm and peel under a thin stream of cold running water.
  6. Store the eggs in the fridge, unpeeled, for up to 5 days.

Tips

  • For jammy yolks, cook at high pressure for 3 minutes, release the pressure at once and chill in the ice bath.
  • Very fresh eggs are harder to peel. If you can, use eggs that are at least a week old.

Questions and answers

Why do pressure cooker eggs peel more easily?

The steam and fast change in temperature make the egg white shrink slightly from the shell membrane. The ice bath finishes the job.

How many eggs can I cook at once?

Most 6 liter (6 quart) pressure cookers hold a dozen or more. Use the same time whether you cook 2 or 12.

Why is there a green ring around my yolk?

It is a harmless reaction from overcooking. Shorten the time by a minute or cool the eggs in ice water right away.
