Roasted Turkey Tenderloin with Maple Mustard Glaze

Turkey tenderloin is the long, narrow muscle under the breast, and it is the easiest way to get a turkey roast on the table on a weeknight. It cooks in about 30 minutes, slices neatly and tastes mild enough to carry bold flavors. A glaze of maple syrup, mustard, garlic and thyme turns brown and sticky in the oven. Searing first gives the meat color, and a thermometer keeps it from drying out.

Instructions

  1. Heat the oven to 200°C (400°F). Pat the tenderloins dry and season them with the salt and pepper.
  2. Whisk the maple syrup, mustard, garlic, thyme and vinegar in a small bowl.
  3. Heat the oil in a large oven-safe skillet over medium-high heat. Sear the tenderloins for 2 to 3 minutes per side, until golden.
  4. Brush half the glaze over the tenderloins and pour the stock around them.
  5. Roast for 18 to 22 minutes, brushing with the remaining glaze once halfway, until a thermometer in the thickest part reads 74°C (165°F).
  6. Rest the tenderloins for 8 to 10 minutes. Slice across the grain and spoon the pan juices over.

Tips

  • Do not skip the thermometer. Turkey tenderloin goes from tender to dry in a few minutes, so pull it at 74°C (165°F) and let carryover heat finish the job.
  • The thin tail end cooks faster. Fold it under and tie it with kitchen twine so the tenderloin cooks evenly.
