Savory Spinach and Cheddar Oatmeal Cups

Oatmeal does not have to be sweet. These baked cups turn rolled oats into a savory, egg-rich bite with spinach, cheddar, spring onion and a little red pepper. They are sturdy enough to eat with your hands, filling enough for a real breakfast and easy to pack. Bake a dozen on Sunday, freeze half and reheat in the microwave in a minute.

Instructions

  1. Heat the oven to 180°C (350°F). Grease a 12-cup standard muffin tin well, or use silicone cups.
  2. Heat the oil in a large pan over medium heat. Add the spinach and cook for 1 to 2 minutes, until wilted. Tip it into a sieve, press out the liquid and chop finely.
  3. Whisk the eggs, milk, baking powder, salt, garlic powder, paprika and pepper together in a large bowl.
  4. Stir in the oats, spinach, spring onions, bell pepper and 70 g of the cheddar. Leave the mixture to stand for 5 minutes so the oats soften.
  5. Divide the mixture among the 12 cups, about 1/2 cup each, pressing it down. Sprinkle the remaining 30 g of cheddar on top.
  6. Bake for 25 to 28 minutes, until set in the center and golden at the edges.
  7. Cool in the tin for 10 minutes, then run a knife around each cup and lift them out. Serve warm or at room temperature.

Tips

  • Wilt the spinach and squeeze it dry. Raw spinach releases water as it bakes and makes the cups soggy and hard to lift.
  • Swap in cooked mushrooms, sweetcorn or chopped sun-dried tomatoes. Use certified gluten-free oats if you need the cups to be gluten-free.

Questions and answers

Can I freeze savory oatmeal cups?

Yes. Cool them completely, freeze on a tray, then bag them for up to 3 months. Reheat from frozen in the microwave for 60 to 90 seconds, or in a 180°C (350°F) oven for 15 minutes.

Can I use quick oats?

Rolled oats give the best texture. Quick oats work too but make a softer, denser cup. Do not use steel-cut oats, which stay hard.

Are savory oatmeal cups a breakfast or a lunch food?

Both. Two cups give about 16 g of protein and taste good warm or at room temperature, so they work for breakfast on the go or a lunchbox side.
