Raw Brussels sprouts taste nothing like the boiled ones many of us grew up avoiding. Sliced very thin, they become a crunchy, slightly nutty salad that handles a sharp lemon dressing well. Toasted hazelnuts and shaved Parmesan add richness. A short rest lets the dressing soften the shreds, and the salad holds up for a day, so it is useful on busy holiday menus.
Instructions
- Toast the hazelnuts in a dry skillet over medium heat for 3 to 4 minutes, shaking often, until fragrant and lightly browned. Rub them in a towel to remove loose skins, then chop roughly.
- Trim the stem ends from the Brussels sprouts and pull off any tough outer leaves. Slice them as thinly as you can with a sharp knife, a mandoline or the slicing disc of a food processor.
- Whisk the olive oil, lemon zest, lemon juice, mustard, honey, salt and pepper in a large bowl.
- Add the shredded sprouts and shallot to the dressing and toss, rubbing the shreds so they take up the liquid. Let the salad stand for 10 minutes.
- Fold in two thirds of the hazelnuts and Parmesan. Taste and add more salt or lemon if needed.
- Pile the salad onto a platter and top with the remaining hazelnuts and Parmesan.
Tips
- Fluff the sliced sprouts with your fingers after cutting so the layers separate and every shred gets coated.
- Pecans, almonds or toasted walnuts can replace the hazelnuts. Dried cranberries or thin apple slices add sweetness.
