Shivit oshi comes from Khorezm, in western Uzbekistan, where cooks color noodle dough green with fresh dill. The wide ribbons are boiled and topped with a beef and vegetable stew, while a cool garlic yogurt sauce goes over or beside the plate. The dill is mild but unmistakable in the noodles. Make it in spring and summer when the herb is at its best.
Instructions
- Blend the dill with the water until very smooth. Strain through a fine sieve, pressing out all the green liquid. You need about 170 ml (2/3 cup).
- Mix the flour and salt, add the dill liquid and knead for 10 minutes into a firm, smooth, bright green dough. Cover and rest for 30 minutes.
- Brown the beef in the oil in a heavy pot over high heat for 8 minutes. Add the onions and cook for 5 minutes, then stir in the carrots, garlic, salt and pepper.
- Add the tomatoes, pepper, potatoes and water. Cover and simmer for 70 minutes until the beef is tender and the sauce has thickened.
- Stir the yogurt, garlic, dill and salt together and refrigerate until needed.
- Roll the dough into a thin sheet about 1.5 mm thick, dust with flour, fold loosely and cut into ribbons about 1.5 cm (1/2 in) wide. Shake them loose.
- Boil the noodles in plenty of salted water for 3 to 4 minutes. Drain and divide among plates.
- Top with the beef stew and serve with the yogurt sauce spooned over or alongside.
Tips
- The color fades with long boiling, so keep cooking to 4 minutes or less. Use very fresh, bright dill for the greenest dough.
- Lamb or chicken thighs can replace the beef. Chicken needs only about 35 minutes of simmering.
