Skillet Beef Tips with Mushrooms and Onions

Beef tips are small pieces of tender steak, seared hard and finished in a quick gravy. Unlike a long stew, they take about 30 minutes, because sirloin only needs a short simmer to stay tender. The mushrooms and onions are browned in the same pan so the gravy picks up every bit of flavor from the bottom. Spoon it over mashed potatoes, buttered noodles or rice, and add a green vegetable on the side.

Instructions

  1. Pat the beef dry and toss it with the flour, 3/4 tsp of the salt and the pepper until lightly coated.
  2. Heat 1 tbsp of the oil in a large skillet over high heat. Brown half the beef for 2 to 3 minutes, turning, then move it to a plate. Repeat with another 1 tbsp oil and the rest of the beef.
  3. Add the last tbsp of oil and the mushrooms. Cook for 5 minutes, stirring only now and then, until deeply browned. Add the onion and the remaining salt and cook for 4 minutes until soft.
  4. Stir in the garlic, mustard and thyme for 30 seconds. Pour in the stock and scrape up the browned bits from the bottom of the pan.
  5. Simmer for 3 minutes until slightly thickened. Return the beef and its juices and simmer for 3 to 4 minutes more, until the beef is cooked through and the gravy coats a spoon.
  6. Taste for salt, scatter with parsley and serve over mashed potatoes, rice or noodles.

Tips

  • Chuck can be used if you simmer it for about 1 1/2 hours instead. Sirloin and rump are the quick options.
  • For a richer gravy, add 1 tbsp tomato paste with the garlic, or a splash of red wine with the stock and let it reduce by half.
