Ripe peaches and chicken make a surprisingly good pair. The fruit softens and caramelizes in the pan, and a splash of cider vinegar keeps the sauce from tasting like dessert. Thyme and shallots add savory depth. The same method works with nectarines or plums, so use whatever stone fruit is in season. Serve it with rice, couscous or a peppery arugula salad.
Instructions
- Season the thighs with half the salt and the pepper. Heat 1 tablespoon of the oil in a large skillet over medium-high heat.
- Cook the thighs for 5 minutes per side until golden. Move them to a plate.
- Add the remaining oil and the peach wedges, cut side down. Cook for 2 to 3 minutes until browned at the edges, then turn and cook 1 minute more. Move the peaches to the plate.
- Add the shallots and thyme to the pan and cook for 2 minutes. Stir in the honey, vinegar and stock and scrape up the browned bits.
- Return the chicken. Simmer, partly covered, for 8 to 10 minutes, turning once, until the sauce is syrupy and the chicken reaches 74°C (165°F).
- Slide the peaches back in for the last minute so they warm through but keep their shape. Season with the remaining salt and sprinkle with parsley.
Tips
- Choose peaches that give slightly when pressed. Fully soft fruit turns to mush in the pan. If they are very sweet, use a little less honey.
- No fresh peaches? Use canned peach halves in juice, drained and cut into wedges, and add them at the very end.
