Soupe au pistou is the vegetable soup of Provence, made in summer when beans, zucchini and basil are at their peak. White beans, green beans, potatoes and small pasta simmer in water until tender, and a paste of crushed basil, garlic, olive oil and cheese is stirred in at the table. The word pistou means pounded, and the sauce is close to pesto without the pine nuts. The soup is thick, fresh and filling, and good hot or lukewarm.
Instructions
- Heat the oil in a large pot over medium heat. Cook the onion and carrots for 8 minutes until the onion softens.
- Add the potatoes, zucchini, green beans and tomatoes with the salt, pepper and bay leaf. Cook for 5 minutes, stirring.
- Pour in the water and bring to a boil. Reduce to a simmer, cover and cook for 25 minutes until the vegetables are tender.
- Stir in the white beans and the pasta and cook for 8 to 10 minutes, until the pasta is al dente. Add water if the soup is too thick.
- While it cooks, make the pistou. Pound the garlic and salt in a mortar to a paste, crush in the basil leaves in batches, then work in the olive oil and cheese. Or blend briefly in a small food processor.
- Remove the bay leaf and taste the soup for seasoning.
- Ladle into bowls and put a spoonful of pistou on each. Stir it in at the table and pass extra cheese.
Tips
- Stir the pistou in off the heat. Cooking it dulls the fresh basil flavor and the green color.
- Use whatever summer vegetables you have. Fresh shelled beans such as cannellini or borlotti are traditional and can replace canned ones, but simmer them for 40 minutes first.
Questions and answers
What is the difference between pistou and pesto?
Pistou is made with basil, garlic and olive oil, and sometimes cheese, with no pine nuts. Pesto from Liguria includes pine nuts and is usually thicker.
Can I freeze soupe au pistou?
Freeze the soup without the pasta and pistou for up to 3 months. Add freshly cooked pasta when reheating, and make the pistou fresh.
Is soupe au pistou vegetarian?
Yes, as long as the cheese is suitable. Parmesan is made with animal rennet, so use a vegetarian hard cheese if needed, or leave the cheese out and the soup is vegan.
