This glaze mixes soy sauce, fresh ginger, garlic, honey and rice vinegar, so it tastes salty, sweet and sharp at once. It clings well to salmon and caramelizes under the broiler into dark, sticky edges. The whole dish takes about 20 minutes of work, which suits a busy evening. Serve it over steamed rice with greens, and spoon extra glaze on top.
Instructions
- Whisk the soy sauce, honey, rice vinegar, ginger, garlic and sesame oil in a small bowl. Pour half into a shallow dish and keep the rest, untouched by raw fish, for brushing later.
- Add the salmon to the dish, turn to coat and leave for 15 minutes at room temperature. A longer soak makes the surface salty and firm.
- Heat the oven to 220°C (425°F) with the rack in the upper third. Line a baking sheet with foil and brush it with the sunflower oil.
- Lift the salmon out of the marinade, discard the used marinade and set the fillets on the sheet. Roast for 8 to 10 minutes.
- Simmer the reserved glaze in a small pan for 2 minutes, until it coats a spoon. Brush it over the fish and broil (grill) for 1 to 2 minutes, until the edges bubble and darken.
- Check that the thickest part reads 63°C (145°F) and the flesh flakes. Top with spring onions and sesame seeds and serve with rice.
Tips
- Use tamari instead of soy sauce for a gluten-free version, and maple syrup in place of honey if you prefer.
- Thin fillets need only 6 to 7 minutes in the oven, so check early and skip the broiler step if the fish is already done.
Questions and answers
Can I use frozen salmon for this recipe?
Yes. Thaw it in the fridge overnight, pat it dry and marinate as written. Extra water on the fish thins the glaze.
How long can I marinate salmon in soy sauce?
Fifteen to 30 minutes is plenty. Soy sauce is salty and starts to cure the surface of the fish, which firms the texture if it sits too long.
What should I serve with soy ginger salmon?
Steamed rice and greens such as bok choy or broccoli are the easy match. A cucumber salad dressed with rice vinegar adds crunch.
