Mini sweet peppers come in red, orange and yellow, and halved they make ready-made edible boats. A filling of cream cheese and feta, brightened with chives, dill, garlic and lemon zest, is quick to pipe or spoon in. There is no cooking, the colors look good on a party platter, and kids who like crunchy vegetables tend to eat them without complaint. Fill them up to a day ahead.
Instructions
- Cut each pepper in half lengthwise through the stem. Scrape out the seeds and white ribs and pat the halves dry. Arrange them cut side up on a platter.
- Mash the feta with a fork in a bowl. Add the cream cheese, chives, dill, garlic, lemon zest, olive oil and pepper and stir until smooth and spreadable.
- Spoon the filling into a piping bag, or a zip-top bag with a corner snipped off.
- Pipe the filling into each pepper half, mounding it slightly. A teaspoon works if you do not have a bag.
- Dust with a little smoked paprika and a few extra chives. Chill for 20 minutes, then serve. Keep covered in the fridge for up to 24 hours.
Tips
- Choose peppers of similar size and trim a thin slice off any that wobble so they sit flat on the platter.
- For a dairy-free filling, mash 240 g (1 cup) of drained white beans with the lemon, garlic, olive oil and herbs until smooth.
