Tahini does the job of the oil and part of the sweetener in this granola, leaving a deep, toasty, slightly savory flavor that plain maple granola lacks. Warmed with honey, it coats the oats in a thin, nutty glaze that crisps as it cools. Sesame seeds and whole almonds add crunch, and a handful of chopped dates stirred in afterward gives you soft little pockets of sweetness.
Instructions
- Heat the oven to 160°C (325°F). Line a large rimmed baking sheet with parchment paper.
- Stir the oats, almonds, sesame seeds, cinnamon and salt together in a large bowl.
- Warm the tahini and honey in a small saucepan over low heat for 1 to 2 minutes, stirring, until loose and pourable. Take it off the heat and stir in the vanilla.
- Pour the tahini mixture over the oats and mix with a spatula, or with clean hands, until everything is evenly coated. The mixture is thick at first and loosens as you work.
- Spread in a thin, even layer on the baking sheet. Bake for 25 to 30 minutes, stirring once after 15 minutes, until golden brown. Watch it closely during the last 5 minutes.
- Cool completely on the pan. The granola crisps as it cools. Stir in the chopped dates if you like, then break into clusters and store in an airtight jar.
Tips
- Stir the tahini thoroughly in its jar before measuring. The oil rises to the top, and the thick paste at the bottom will not coat the oats evenly if you scoop it first.
- Pull the pan once the edges turn golden brown. Sesame seeds and tahini go from toasty to bitter within a couple of minutes.
Questions and answers
Does tahini granola taste bitter?
Not when it is baked just until golden. Tahini and honey together taste nutty, a little like caramel. Bitterness usually means it was overbaked, so take it out while the color is golden, not dark brown.
Can I use peanut or almond butter instead of tahini?
Yes, in the same amount. Peanut butter gives a familiar, richer flavor and almond butter a milder one. Warm it with the honey in the same way.
Can I make tahini granola nut-free?
Yes. Replace the almonds with the same weight of pumpkin or sunflower seeds. Sesame is a common allergen in its own right, so check labels and any house rules first.
