Tartiflette is the dish of the French Alps: potatoes, smoked bacon and onions cooked with white wine and cream, then covered with a round of Reblochon cheese and baked until it melts into a golden, bubbling blanket. It is served in ski resorts across Savoie and Haute-Savoie, usually with a green salad and pickles to cut the richness. It is easy to assemble and feeds a hungry crowd.
Instructions
- Heat the oven to 200°C (400°F). Boil the potato slices in salted water for 8 to 10 minutes until just tender, then drain well.
- Heat the oil in a large skillet over medium heat. Cook the bacon for 5 minutes until the fat runs and the edges brown. Add the onions and cook for 10 minutes until soft and golden, then add the garlic for 1 minute.
- Pour in the wine and let it bubble for 3 minutes, scraping the pan. Stir in the cream, salt and pepper, then fold in the potatoes.
- Butter a 2-liter (2-quart) baking dish and spoon in the potato mixture, leveling the top.
- Cut the Reblochon in half horizontally to make two thin rounds. Lay them rind side up over the potatoes.
- Bake for 20 to 25 minutes until the cheese has melted, bubbled and browned in spots. Let it stand for 5 minutes.
- Serve hot with a green salad and cornichons.
Tips
- Reblochon is a washed-rind cheese from Savoie. If you cannot find it, use a ripe, soft washed-rind cheese such as Taleggio or Munster.
- Use waxy potatoes, which hold their shape. Floury potatoes break down into a mash.
Questions and answers
What can I use instead of Reblochon in tartiflette?
A soft washed-rind cheese such as Taleggio or Munster gives a similar melt and aroma. Camembert or a mild Brie works in a pinch, though the flavor is less pungent.
Can I prepare tartiflette ahead of time?
Yes. Assemble it up to a day ahead, covered in the fridge, and add 10 minutes to the baking time. Do not freeze it, because the potatoes turn grainy.
What do you serve with tartiflette?
A crisp green salad with a sharp vinaigrette, cornichons and thin slices of cured ham. A dry white wine from Savoie is the usual drink.
