Grated zucchini keeps lean turkey juicy, and it makes the patties lighter than a standard burger. The zucchini is salted and squeezed so the mixture does not turn wet, then mixed with turkey, spring onions, herbs and Parmesan. The patties brown in a skillet in a few minutes and are good hot or cold, which makes them useful for lunchboxes. Serve with a lemon yogurt sauce, a green salad or tucked into pita bread.
Instructions
- Toss the grated zucchini with the 1/2 teaspoon of salt in a colander and leave for 10 minutes. Squeeze out as much liquid as you can in a clean cloth.
- Stir the sauce ingredients together in a small bowl and chill until serving.
- In a large bowl, combine the squeezed zucchini, turkey, spring onions, Parmesan, panko, egg, garlic, herbs, oregano, the 3/4 teaspoon of salt and the pepper. Mix gently until just combined.
- Shape into 12 patties about 7 cm (2 3/4 inches) wide and 1.5 cm (1/2 inch) thick. Chill for 10 minutes if time allows.
- Heat the oil in a large nonstick skillet over medium heat. Cook the patties in batches for 4 to 5 minutes per side, until golden and 74°C (165°F) inside.
- Drain briefly and serve hot with the lemon yogurt sauce.
Tips
- Squeeze the zucchini properly, since extra water makes the mixture loose and the patties fall apart. Wring it in a clean cloth until barely a drop comes out.
- Cook a few extra patties for lunchboxes. They keep for 4 days in the fridge and are good cold, in a pita or on a salad.
