Vegan Banana Oat Muffins

Ripe bananas do the work of eggs in these muffins, binding the batter and keeping it moist, so no egg replacer is needed. Rolled oats add a little chew, maple syrup and brown sugar add sweetness, and oil keeps the crumb soft. The batter is mixed in two bowls and is ready for the oven in 15 minutes. They freeze well, which makes them useful for busy mornings.

Instructions

  1. Heat the oven to 190°C (375°F). Line a 12-cup muffin pan with paper liners.
  2. Mash the bananas in a large bowl until almost smooth. Whisk in the oil, maple syrup, brown sugar, oat milk and vanilla.
  3. In another bowl, stir together the flour, 90 g of oats, baking powder, baking soda, salt and cinnamon.
  4. Add the dry mixture to the banana mixture and fold until just combined. Let the batter stand for 5 minutes so the oats soften and thicken it.
  5. Divide the batter among the cups, filling them about three-quarters full, and sprinkle with the extra oats.
  6. Bake for 20 to 24 minutes, until golden and a toothpick comes out clean.
  7. Cool in the pan for 5 minutes, then move the muffins to a rack so steam can escape.

Tips

  • Use bananas with plenty of brown spots. If they are only just ripe, add another tablespoon of maple syrup.
  • Fold in 60 g (1/2 cup) chopped walnuts or dairy-free chocolate chips for extra texture.
