Zibdiyet Gambari (Gaza Clay-Pot Shrimp with Tomato and Chili)

Zibdiyet gambari is a seafood dish from Gaza, named after the small clay dish, zibdiyeh, in which it is cooked and served. Shrimp bake in a sizzling sauce of olive oil, plenty of garlic, hot peppers and tomatoes until they turn pink and the sauce bubbles around them. It arrives at the table in the pot, with warm bread to mop up the oil.

Instructions

  1. Heat the oven to 220°C (425°F). Warm the olive oil in a skillet over medium heat and cook the garlic and chilies for 1 minute until fragrant but not browned.
  2. Add the tomatoes and the 1/2 teaspoon of salt. Simmer for 15 minutes, stirring now and then, until the sauce has thickened and the oil begins to separate.
  3. Pour the sauce into a clay pot or a shallow ovenproof dish and bake for 5 minutes until bubbling.
  4. Toss the shrimp with the second 1/2 teaspoon of salt and nestle them into the hot sauce in a single layer.
  5. Bake for 10 to 12 minutes, until the shrimp are pink and opaque and have curled into loose C shapes.
  6. Squeeze over the lemon juice, scatter with dill and serve in the pot with bread.

Tips

  • Shrimp turn rubbery fast. Take them out of the oven as soon as they are opaque and let the heat of the dish finish them.
  • Canned whole peeled tomatoes work when fresh ones are not at their best. Crush them by hand and cook the sauce a little longer to thicken it.
