Crispy Vegan Oat Waffles

Oats make surprisingly good waffles. Blitz them to a coarse flour, add banana for sweetness and softness, ground flaxseed in place of eggs and a little cornstarch for crunch, and the waffle iron does the rest. The result is crisp outside and tender inside, with a toasty oat flavor that suits maple syrup, nut butter or fruit. The recipe is vegan and, with certified gluten-free oats, safe for people who avoid gluten.

Instructions

  1. Stir the ground flaxseed with the water in a small bowl and leave for 5 minutes, until gel-like.
  2. Grind the oats in a blender for 20 to 30 seconds into a coarse flour. Tip into a large bowl and whisk with the cornstarch, baking powder, cinnamon and salt.
  3. Mash the banana well in a jug and whisk in the oat milk, coconut oil, maple syrup, vanilla and flax gel.
  4. Pour the wet mixture into the dry ingredients and stir until combined. Let the batter rest for 10 minutes. It will thicken as the oats absorb liquid.
  5. Heat the waffle iron and brush it generously with oil. Pour in about 150 ml (2/3 cup) of batter and cook for 5 to 6 minutes, until deep golden brown and crisp. Oat waffles need longer than wheat ones.
  6. Cool the waffles on a wire rack for a minute so they firm up. Serve with maple syrup, fruit or nut butter.

Tips

  • Oat batter keeps thickening as it sits, so loosen it with a splash of oat milk if it turns stodgy while you cook the later waffles.
  • Let the waffles cool on a rack before stacking. Their crispness firms up as they cool, and a quick pass through the toaster brings it back.

Questions and answers

Are oats gluten-free?

Oats do not contain gluten, but they are often processed on equipment shared with wheat. Choose oats labeled certified gluten-free if you avoid gluten.

Why are my oat waffles soggy?

They were probably taken out too early or the batter was too wet. Cook until the steam stops and the waffle is deep golden, rest the batter for 10 minutes and cool the waffles on a rack.

Can I use steel-cut oats for these waffles?

No. Steel-cut oats stay gritty when ground and do not soften in the batter. Use old-fashioned rolled oats.
