Garlic Herb Roast Pork Tenderloin

Pork tenderloin is the quick-cooking, lean cut that suits a small household: one piece of about 500 g feeds two or three people, and it cooks in under half an hour. The rub of garlic, rosemary, lemon zest and olive oil goes on in a minute. Searing in an ovenproof skillet builds a brown crust, and a short roast finishes it. Pull it at the right temperature and rest it, and the meat stays juicy and just faintly pink.

Instructions

  1. Heat the oven to 220°C (425°F). Pat the tenderloin dry. If one end is very thin, fold it under and tie it with kitchen string so the thickness is even.
  2. Mix the garlic, rosemary, lemon zest, lemon juice, 1 tbsp of the olive oil, the salt and the pepper. Rub the mixture all over the pork.
  3. Heat the remaining oil in an ovenproof skillet over medium-high heat. Sear the pork for about 2 minutes on each of its four sides until browned.
  4. Move the skillet to the oven and roast for 10 to 14 minutes, until a thermometer in the thickest part reads 60°C (140°F).
  5. Rest the pork on a board for 10 minutes. It rises to 63°C (145°F) and the juices settle. A little pink in the center is fine.
  6. Slice the pork into rounds about 1.5 cm (1/2 inch) thick, spoon over the pan juices and serve.

Tips

  • Trim the thin, silvery membrane (silver skin) with a sharp knife, or it will curl and stay chewy.
  • No rosemary? Use thyme or sage. For a sweeter finish, brush the pork with 1 tbsp of honey in the last 5 minutes of roasting.
