Ground Turkey and Cabbage Stir-Fry

Cabbage is cheap, lasts for weeks in the fridge and cooks in a few minutes, which makes this stir-fry a good answer when the shopping has not been done. The turkey is browned first so it gets some color, then the cabbage and carrots join it in a hot pan with garlic, ginger and soy sauce. A drizzle of sesame oil at the end gives it fragrance. Serve over rice, or eat it as it is for a low-carb dinner.

Instructions

  1. Mix the soy sauce, vinegar, sugar and pepper in a small bowl.
  2. Heat the oil in a large wok or deep skillet over high heat. Add the turkey and salt and cook for 5 to 6 minutes, breaking up the meat and letting it brown, until cooked through with no pink remaining (74°C / 165°F).
  3. Add the garlic and ginger and stir for 30 seconds.
  4. Add the cabbage and carrots. Stir-fry for 4 to 5 minutes, until the cabbage is wilted but still has some crunch.
  5. Pour in the sauce and toss for 1 minute until everything is coated and the pan is nearly dry.
  6. Take the pan off the heat. Stir in the spring onions and sesame oil, sprinkle with sesame seeds and serve with rice.

Tips

  • Keep the heat high and do not cover the pan, or the cabbage steams and turns soft and watery. Cook in two batches if your pan is small.
  • For more heat, add chili flakes or a spoonful of chili paste. A squeeze of lime at the end brightens the dish.
