Maple Roasted Brussels Sprouts with Pecans

Brussels sprouts are at their best roasted: the outer leaves crisp up like chips and the insides turn sweet and tender. A little maple syrup and balsamic vinegar added near the end give them a glossy, caramelized coat, and pecans bring crunch. This is a standard on holiday tables, but it is quick enough for a weeknight. The key is a hot oven and placing the halved sprouts cut side down.

Instructions

  1. Heat the oven to 220°C (425°F) with a large baking tray inside.
  2. Trim the stem ends from the sprouts, pull off any loose or yellow outer leaves and halve them from top to bottom. Toss them with the olive oil, salt and pepper.
  3. Carefully tip the sprouts onto the hot tray and turn them cut side down in a single layer. Roast for 15 minutes without moving them, until the cut sides are deep golden.
  4. Add the pecans to the tray and stir the sprouts. Roast for another 5 minutes.
  5. Mix the maple syrup and balsamic vinegar and drizzle them over the sprouts. Toss and roast for 3 to 5 minutes more, until glossy and caramelized at the edges but not burnt.
  6. Taste, add a pinch of salt if needed and serve hot.

Tips

  • Keep the sprouts a similar size so they cook evenly. Halve large ones, quarter very large ones and leave tiny ones whole.
  • Dried cranberries or pomegranate seeds add color and tartness, and a pinch of chili flakes adds gentle heat.

Questions and answers

How do I make Brussels sprouts crispy?

Use a hot oven, plenty of oil and a hot tray, and lay them cut side down without crowding. Do not stir too often, so the cut sides brown.

Why are my Brussels sprouts bitter?

Overcooking, especially boiling, brings out bitterness. Roasting at a high temperature with a little sweetness from maple syrup balances the flavor.

Can I make roasted Brussels sprouts ahead of time?

Roast them until almost done and keep them at room temperature for up to 2 hours. Finish with the glaze and pecans in a hot oven for 5 minutes before serving.
