Toad in the hole is a British supper of pork sausages baked in a large Yorkshire pudding batter. The sausages are browned first in hot fat, the batter is poured around them, and the whole tin goes back into a hot oven until the pudding puffs up with crisp edges and soft, eggy centers. It is cheap and filling, and children like it. Serve it straight from the oven with onion gravy and peas.
Instructions
- Whisk the flour and salt in a bowl. Make a well, add the eggs and whisk, then add the milk gradually until the batter is smooth. Stir in the mustard if using, and rest for 30 minutes.
- Heat the oven to 220°C (425°F). Put the sausages in a 23 x 30 cm (9 x 12 inch) roasting tin with the oil and roast for 15 minutes, turning once, until browned and the fat is sizzling hot.
- Take the tin from the oven, stir the batter and pour it around the sausages. It should sizzle as it hits the fat.
- Return the tin to the oven at once and bake for 25 to 30 minutes until the pudding has risen, is deep golden and crisp at the edges, and the sausages reach 71°C (160°F). Keep the door closed for the first 20 minutes.
- Serve straight away with onion gravy and peas.
Tips
- The fat must be sizzling when the batter goes in, or the pudding stays flat. Keep the oven door shut while it rises.
- Browning the sausages first gives better flavor. Add onion wedges or a few thyme sprigs to the tin with the sausages for a variation.
Questions and answers

Can I make toad in the hole ahead of time?
Make the batter a day ahead and keep it in the fridge, but bake the dish just before serving. The pudding is best fresh and deflates as it sits.
